  1. The key to making a great skillet is having the potatoes more crispy on the outside, while nice and soft on the inside.
  2. Boil potatoes in salt water for 5-7 minutes or until they start to get soft.
  3. Remove from water and set aside
  4. Grill whole sausages and set aside
  5. When potatoes and sausages are cooled, cut into smallish sized pieces (cubes for potatoes, slices for sausage)
  6. Finely chop red onion, jalapeño, green onions and red bell pepper
  7. Chop bacon into 1/2 inch squares
  8. In saute pan add chopped bacon and fry until done. Remove and set aside with sausage (leave bacon grease in pan)
  9. Add some olive oil to pan and cook potatoes until 1/2 way done
  10. Add red onion, 3 cloves minced garlic, jalapeño, bell pepper and a pinch red pepper flake
  11. Cook for a 5 or so minutes then add sliced sausages and bacon
  12. Add a small amount of butter and S & P to taste (remember the butter and bacon grease are very salty, so be careful on salt)
  13. Cook until crispy on outside
  14. Sprinkle with minced green onions for garnish
  15. *If you like cheese with your skillets, try adding a pepper jack/Parmesan blend.
