Ingredients:

Directions:

  1. In a mixing bowl, stir together garlic, onion, lime juice, salt and pepper.
  2. Allow to rest for about 10 minutes.
  3. Meanwhile, prepare pepper, coarsely dice tomatoes, and peel, pit, and dice avocados.
  4. Add all but half the diced avocados to the mixture.
  5. Mash the remaining avocados and add to mixture.
  6. Chop cilantro and add to bowl.
  7. Mix to blend and serve.
  8. Note: I find that if you wait to chop the cilantro until you are ready to add it to the recipe, it doesn't get that soapy taste to it.
  9. Serve with Tortilla chips.
  10. I'm saying 4 servings, but I could sit down with a spoon and eat this all by myself.
