Ingredients:

  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg

Directions:

  1. Heat oven to 400°F
  2. Grease bottom of muffin cups.
  3. Mix all ingredients and stir until flour is moistened and mixed well.
  4. Fold in raisins (or other).
  5. Fill muffin cups 2/3 full.
  6. Sprinkle a pinch of sugar over each muffin. Bake for 18-20 minutes.
