Ingredients:

  • 1 egg
  • 1/8 cup sugar
  • 1/8 cup splenda
  • 1/2 tsp vanilla

Directions:

  1. Put first 5 ingredients in blender or Food processor, Roll out graham cracker in plastic bag with rolling pin to make fine cracker crumbs, divide cracker crumbs in 12- 1-1/2 minicupcake paper liners and place in mini cupcake tin or large cupcake pan, divide the cream cheese mixture into the 12 cups, Bake at 350 for 15 min. Top with jam or fold in 2 Tbsp chocolate chips before putting into papers.
