Potato Casserole With Feta and Egg

Ingredients:

Directions:

  1. Spray casserole with vegetable oil or butter well.
  2. Boil potatoes until soft and then pare and cut into thin slices.
  3. Put a layer of potato slices in the bottom of the casserole.
  4. Sprinkle generously with bits of feta cheese.
  5. Put half the hard boiled eggs over layers.
  6. Put tiny slices of butter in between layers.
  7. Repeat layers until casserole is full and the last layer should be potatoes.
  8. Sprinkle the parmesan cheese on top of the last potato layer.
  9. Bake in a preheated 350 degree oven for about 30 minutes.
  10. Serve immediately.
