Pot Roast Made With Beer for the Pressure Cooker

Ingredients:

  • 1 1/2-2 lbs chuck roast
  • 3 tbsp olive oil
  • 2 tbsp mustard
  • 1 tsp paprika
  • 1/2 tsp coarse salt
  • 1/2 tsp black pepper
  • 12 oz beer
  • 2 tbsp flour
  • 2 tbsp tomato paste
  • 1 cup beef broth (or chicken)
  • 1 large onion

Directions:

  1. Heat oil in pressure cooker ( medium).
  2. Brown beef on both sides, then remove and set aside.
  3. Add to same pan: small amount of beer and loosen/stir up bits.
  4. Add flour and tomato paste to pan and cook over medium for one minute.
  5. Place the meat and everything else ( and the rest of the beer ) in the pan.
  6. Close this lid and cook on high pressure for about 1 hour.
  7. Let pressure come down naturally.
  8. Serve over rice or noodles.
