Ingredients:

Directions:

  1. Bring potatoes to boil in large pot of water.
  2. Cook until very tender, about 15 minutes, and drain well.
  3. Let cool slightly.
  4. In bowl of stand mixer, combine potatoes and cream cheese and beat well, until smooth.
  5. Add eggs(make sure potatoes aren't still steaming! You don't want to cook the eggs) and a fair bit of fresh ground black pepper and mix well. See Photo
  6. Refrigerate for at least 2 hours, covered.
  7. Separate potato mixture into 4 medium sized bowls and add a set of mix ins to each bowl and combine well.
  8. **add potato flakes, if needed, to thicken mixtures enough to roll into balls.
  9. Roll mixtures into about T sized balls. Roll each ball into a coordinating coating: I used chives for the bacon cheese, spinach for the ham and cheese, smoked paprika for the chili/cheese and cotija for the hot pepper. See Photo
  10. Place on lightly greased baking sheet and bake at 400 or about 10-12 minutes until warmed through and firm enough to pick up. :)
  11. Serve or present in candy boxes/papers, if desired :)
