Ingredients:

Directions:

  1. Preheat the oven to 350.
  2. In a food processor, combine the cookies, pecans, brown sugar, butter, cinnamon and vanilla and pulse until cookies are finely ground.
  3. In an 8 inch square baking dish, toss the pineapple with the crumb mixture.
  4. Bake for 30 minutes or until the pineapple is piping hot and the crumbs are crusty.
