Ingredients:

Directions:

  1. Pat fish dry and fry until golden.
  2. Drain and cool on paper towel.
  3. When cool, layer in a deep dish.
  4. In a clean pan, heat a little oil and fry onions til soft.
  5. Add curry powder, turmeric, sugar and raisins and cook for 1 minute.
  6. Stir in vinegar and water to make a thin sauce.
  7. Add bay leaves, apricot jam and seasonings to taste.
  8. Simmer uncovered for 10 minutes.
  9. Pour over fish, cover and refrigerate for at least 3 days before serving.
