Pecan Pumpkin Pie-Non Dairy

Ingredients:

  • 3 eggs
  • 1 cup solid pack pumpkin
  • 1/3 cup sugar
  • 2/3 cup corn syrup
  • 1/2 cup sugar
  • 3/4 tsp vanilla
  • 1 cup pecan halves

Directions:

  1. Preheat oven to 350.
  2. Stir together 1 beaten egg, pumpkin, 1/3 c sugar and pie spice.
  3. Spread in bottom of pie crust.
  4. Combine 2 beaten eggs, corn syrup, 1/2 c sugar,margarine, vanilla.
  5. Stir in nuts.
  6. Spoon over pumpkin layer.
  7. Place on a baking sheet and bake for 50 minutes until set.
