Peanut Butter Frosted Banana Cake

Directions:

  1. CAKE:
  2. Preheat oven to 350 degrees.
  3. Grease and flour a 13x9-inch pan.
  4. Cream together shortening and sugar.
  5. Add eggs, one at a time, beating well after each addition.
  6. Beat in vanilla.
  7. In small bowl combine bananas and buttermilk; set aside.
  8. Combine flour, baking powder, baking soda and salt.
  9. Add dry ingredients alternately with banana mixture to creamed mixture.
  10. Begin and end with flour mixture; beat until well combined.
  11. Pour batter evenly into prepared pan.
  12. Bake for 30 to 35 minutes until done.
  13. Cool cake completely in pan on wire rack.
  14. Frost cooled cake with the following icing.
  15. ICING:
  16. In small mixing bowl, beat cream cheese and syrup until smooth. Add peanut butter and beat until well blended.
  17. Spread on cooled cake.
  18. Garnish with chopped peanuts, if desired.
