Orzo Baked With Greek Cheeses

Ingredients:

  • 1 (14 oz) can chicken broth
  • 8 oz orzo pasta (or risi pasta)
  • 1/4 cup olive oil
  • 1/3 cup kefalotiri, grated

Directions:

  1. Pour broth into large pot. Add enough water to broth to almost fill the pot. Add salt and bring to a boil. Stir in orzo and boil until just tender but still firm to bite, stirring occasionally. Drain well. Return to pot. Mix in cream, oil, feta and dill. Season with salt and pepper.
  2. Transfer to 1 1/2-quart baking dish. (You can prepare this dish one day ahead. Cover and refrigerate. Bring orzo to room temperature before continuing.
  3. Preheat oven to 350°F.
  4. Sprinkle orzo with cheese. Bake until heated through, about 40 minutes.
