Ingredients:

Directions:

  1. Pre-heat oven to 375 degrees F.
  2. Mix first 6 ingeredients in a large bowl. make a well in the centre.
  3. Process the next 6 ingredients in a blender until smooth. add to well in flour mixture, and stir until just moistened.
  4. Fill 12 greased muffin cups 3/4 full.
  5. Bake for 20 minutes (until a wooden pick inserted in the centre comes out clean).
  6. Let rest in pan for 5 minutes, then remove muffins to a wire rack to cool.
