One-Pot Sweet Potatoes

Ingredients:

  • 1/2 cup white sugar
  • 1 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp salt
  • 1/2 tsp pepper
  • 3/4 cup water
  • 1/4 cup butter , cut into pieces

Directions:

  1. Wash the ptoatoes.
  2. Peel and slice them into 1/4 inch widths. Place slices in a bowl of ice cold water to keep their color.
  3. Mix together the sugars, cinnamon, nutmeg, salt, pepper and flour in a seperate bowl.
  4. Drain the ptoato slices and place them in a 3 QT pot.
  5. Sprinkle the sugar mixture over the potatoes.
  6. Add the water and butter.
  7. Let the potatoes come to a boil, reduce the heat, cover and let simmer until tender, about 20 minutes.
  8. Stir lightly and serve.
