Olive Oil Poached Shrimp Crostini

Ingredients:

Directions:

  1. Combine the shrimp, garlic, extra virgin olive oil, red pepper flakes, and salt/pepper in a bowl. Set aside.
  2. Preheat oven to 400 degrees.
  3. Slice the baguette into crostinis and line onto sheet tray.
  4. Bake until the crostinis are golden brown. Remove from oven and set aside.
  5. Heat a sauté pan over medium high heat, once hot add the shrimp mixture.
  6. If garlic starts to burn turn the heat down.
  7. Cook until the shrimp are cooked through, turn pink, about 8 minutes.
  8. Toss parsley into the shrimp mixture.
  9. Place shrimp and olive oil in a bowl and serve with crostinis on the side.
