My Flax Bread

Ingredients:

  • 2 tbsp yeast
  • 1 tbsp sugar
  • 3 cups warm water
  • 1 tsp salt
  • 3 cups whole wheat flour (or lori's flour 13 on zaar...)
  • 5 -6 cups flour

Directions:

  1. Dissolve the yeast, sugar and water.
  2. Let stand until foamy.
  3. Add the eggs, flax, salt and Flour 13. Mix well.
  4. Stir in enough flour to make a dough.
  5. Turn out onto a floured surface. Knead until smooth.
  6. Place in an oiled bowl. Cover. Set in a warm place. Let stand 1 hour.
  7. Punch down. Knead briefly.
  8. Return to bowl. Cover. Let rise 1 more hour.
  9. Punch down. Fill as desired (recipes will follow) or shape into a round. Brush with egg. Place on an oiled baking sheet. Cover. Let rise 30 minutes.
  10. Heat oven 350°F.
  11. Bake 25-45 minutes (depending on filling) or 30 minutes for loaf.
  12. Let cool on a rack.
