Millet Muffins With Honey Pecan Butter

Ingredients:

  • 2/3 cup millet
  • 3/4 cup brown sugar
  • 1 egg
  • 1 cup buttermilk
  • 1/4 cup melted butter
  • 1 1/2 cups flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp finely chopped toasted pecans
  • 1 tbsp honey

Directions:

  1. Preheat oven to 375 degrees. Coarsely grind millet in food processor or coffee grinder; set aside. Add brown sugar and egg to a large bowl. Whisk until well combined. Stir in millet, milk, and butter.
  2. In another bowl, combine flour, baking powder, baking soda, and salt. Make a well in the center and add the wet ingredients. Stir just until moistened.
  3. Spoon into muffin tins coated with cooking spray. Bake for 18 minutes or until lightly browned.
  4. Combine the butter, pecans, and honey in a small bowl. Serve with the muffins.
