Ingredients:

  • 3 eggs
  • 1 cup sugar
  • 1 cup oil
  • 1 tbsp vanilla
  • 2 cups flour
  • 1 tbsp cinnamon
  • 1 tsp salt
  • 1/4 tsp baking powder

Directions:

  1. Beat eggs until frothy. Add sugar, oil and vanilla, beat until lemon colored. Add zucchini and dry ingredients.
  2. Grease pans, bake at 350°F for 55-60 minutes.
  3. You can add 1 cup nuts or raisins, but make sure you mix them with the flour or they will sink to the bottom of the baking pans.
