Ingredients:

  1. Combine the mustard and egg in a small bowl. Place the bread crumbs on a sheet of wax paper. Dip the chicken in the egg, then in the bread crumbs to cover.
  2. Heat the oil in a large skillet over medium heat. Cook the chicken in the oil until golden and cooked through, about 5 minutes on each side. Transfer to a plate.
  3. Add the broth and lemon juice to the skillet. Simmer 30 seconds, stir in the parsley.
  4. Pour the sauce over the chicken and garnish with the lemon sliced, if desired.
