Low Fat Mashed Potatoes

Ingredients:

  • 1 1/2 medium onions
  • 1/2 tbsp olive oil
  • 1/2 cup yogurt

Directions:

  1. Peel and cube potaoes.
  2. Chop the onions.
  3. A microwave add a little water, cover and cook until the potatoes are soft. or.
  4. In a pot cover the potatoes with water, add a little salt and cook until the potatoes are soft, drain the water.
  5. With a minimum of olive oil sauté the onions until soft.
  6. While the potatoes are hot, add the onion including the oil to the potatoes.
  7. Add the yougert
  8. Use a riser or food processor to mash the potatoes.
  9. Add more yougert or low fat milk if required.
