Ingredients:

  • 4 tbsp butter
  • 1 cup flour
  • 1/4 tsp salt
  • 1/4 cup whipped cream
  • 3 eggs
  • 1 1/2 tsp lemon zest
  • 3/4 cup sugar
  • 4 tbsp butter
  • 1/2 cup sugar

Directions:

  1. Make the pastry by sifting together dry ingredients.
  2. Cut in butter.
  3. Chill and roll into circles.
  4. Make lemon curd by creaming together all ingredients in a saucepan until thinkens.
  5. Whip egg whites until stiff.
  6. Assemble together.
