Adopted from the RecipeZaar account. I haven't made these yet. Ingredients:
4 tablespoons butter |
1 cup flour |
1/4 teaspoon salt |
1 egg yolk |
1/4 cup whipped cream |
3 eggs |
1 1/2 teaspoons lemon zest |
3/4 cup sugar |
4 tablespoons butter |
4 egg whites |
1/2 cup sugar |
Directions:
1. Make the pastry by sifting together dry ingredients. 2. Cut in butter. 3. Chill and roll into circles. 4. Make lemon curd by creaming together all ingredients in a saucepan until thinkens. 5. Whip egg whites until stiff. 6. Assemble together. |
