Ingredients:

  • 6 oz shortcrust pastry (i make my own but you could always use shop bought)
  • jam
  • 2 oz margarine or 2 oz butter
  • 1 egg

Directions:

  1. Roll out pastry thinly cutting rounds using a 3 cutter and line 16-18 pastry tins.
  2. Place a little jam in each.
  3. Cream margarine and sugar,.
  4. Fold in beaten egg and flour.
  5. Place a small spoonful of mixture into each case sealing in the jam.
  6. Bake in a moderatly hot oven 200c 400f Gas 6 for 15-20 minutes.
