Honey-Horseradish Mustard

Ingredients:

Directions:

  1. Combine wine, onion, garlic and honey in a medium saucepan.
  2. Bring to a simmer; simmer 5 minutes.
  3. Remove from heat.
  4. Strain into a 4 cup measuring cup with a pouring spout.
  5. Cool slightly.
  6. Combine dry mustard, horseradish, olive oil and salt in a small saucepan.
  7. Slowly whisk in the wine mixture until smooth.
  8. Heat over medium-low heat, stirring constantly until thickened (about 15 minutes).
  9. Remove from heat and cool.
  10. Spoon into sterilized jars.
  11. Refrigerate for at least one day for flavors to blend, and then keep refrigerated and use within one month.
