Ingredients:

Directions:

  1. In medium bowl, stir together 1 cup cornmeal, 1 cup flour, 4 teaspoons baking powder, 1/2 teaspoon salt and 4 tablespoons sugar.
  2. In a small bowl, lightly beat 2 eggs then stir in 4 tablespoons vegetable oil, 1 cup whole milk, 4 teaspoons minced fresh sage and, if desired, 1/3 cup of finely chopped parsley.
  3. Stir the milk mixture into the cornmeal mixture and stir just until combined.
  4. Scrape the batter into a buttered 8-inch-square baking pan. Bake in a 400-degree oven for 20 to 25 minutes, until lightly browned.
  5. Per serving: 391 calories, 11 gm protein, 35 gm carbohydrates, 24 gm fat, 58 mg cholesterol, 6 gm saturated fat, 588 mg sodium, 4 gm dietary fiber
