Ground Beef Pie

Ingredients:

  • 1 medium onion, diced
  • 2 medium tomatoes, diced
  • 1 (6 oz) can tomato paste
  • 3 garlic cloves ( smashed)
  • 1 dash salt
  • 1 dash pepper
  • 1/4 cup olive oil
  • 1/2 cup raisins
  • 3 cups cooked rice

Directions:

  1. Prepare the rice using 1/2 cup more of water. When ready set aside.
  2. In a fryer pan mix oil, onion, garlic, salt and pepper in a medium heat until the onion is tender.
  3. Add tomatoes and tomato paste and keep in medium heat for about 7 minutes.
  4. At this point add the groundbeef and fry it well. If the mix is too dry add some water and let it boil.
  5. Add the raisins and cook for 3 more minutes.
  6. Use a 9 x 9 inch pan to make the pie spraying oil before to press the first layer of rice.
  7. Spread the groundbeef mixture over the rice and cover with another layer of rice pressing firmly.
  8. For garnish spread grated boiled egg and parsley (optional).
