Greek Oven Roasted Potatoes (Great Comfort Food)

Ingredients:

  • 6 -8 medium potatoes
  • 2 -3 tbsp garlic powder
  • 2 -3 tbsp paprika
  • salt , to taste
  • pepper , to taste
  • 2 -3 cups water

Directions:

  1. USE roasting pan with lid.
  2. Spray the bottom with vegetable spray.
  3. Preheat oven to 325'F.
  4. Peel Potatoes and slice in 4.
  5. (across and then in half).
  6. Add Potatoes to roasting pan.
  7. Add Garlic Powder.
  8. Add Paprika.
  9. Add Salt and Pepper.
  10. Add the Oil.
  11. THEN place roasting lid onto pan.
  12. And slowly mix the potatoes with spices and oil by moving around.
  13. Make sure hands are holding down lid.
  14. Open the lid after mixing and add 1 cup of water.
  15. Place potatoes in oven for approximately 1 to 1 1/2 hour.
  16. Keep checking approximately every 20 mins to briefly mix and add a little water.
  17. *Amount of spices depends on the amount.
  18. Of potatoes used and personal taste.
  19. I usually consider 2 potatoes per person.
  20. If using as a side dish.
