Ginger Pumpkin Soup

Ingredients:

  • 1 cup onion
  • 1 cup carrots
  • 2 cloves garlic, minced
  • 2 tbsp light butter
  • 15 oz pumpkin
  • 1 cup milk

Directions:

  1. Chop onion and carrots. Saute in pan with butter and garlic until onions are translucent. (I use LandO'Lake Light Butter) If the carrots are still not cooked through, add a little broth and cook until tender. Put in food processor with some broth and blend until smooth. Add with rest of ingredients in a pot and cook on medium until cooked through.
  2. Can serve with sour cream on top - but those calories are not included.
