Wonderful winter or autumn soup. Use canned pumpkin to make it easy. Ingredients:
1 cup onion |
1 cup carrots |
1 tsp ground ginger |
2 cloves garlic, minced |
2 tbsp light butter |
16 oz chicken broth |
15 oz pumpkin |
1 cup milk |
Directions:
1. Chop onion and carrots. Saute in pan with butter and garlic until onions are translucent. (I use LandO'Lake Light Butter) If the carrots are still not cooked through, add a little broth and cook until tender. Put in food processor with some broth and blend until smooth. Add with rest of ingredients in a pot and cook on medium until cooked through. 2. Can serve with sour cream on top - but those calories are not included. |
