Garlic Potato Clam Chowder

Ingredients:

Directions:

  1. Heat olive oil over medium heat in large saucepan.
  2. Add chopped onion and shredded carrots and saute until onion is translucent, about 5 minutes.
  3. Add chicken broth and pepper and bring to a boil.
  4. Stir in clams, potato flakes, potato seasoning packet, and milk.
  5. Cook, stirring or whisking constantly, until thoroughly heated and smooth.
  6. Do not allow to boil.
  7. Add addtional milk for a thinner consistency.
  8. Garnish with dill weed and shredded cheese if desired.
