Ingredients:

Directions:

  1. Preheat oven to 325°.
  2. Combine first 8 ingredients in a large bowl.
  3. Combine the juice in a small saucepan. Bring to a boil; cook until reduced to 2/3 cup.
  4. Remove from heat; stir in honey. Slowly pour juice mixture and oil over oat mixture, tossing to coat.
  5. Spread oat mixture evenly onto two baking pans coated with cooking spray. Bake at 325° for 40 minutes or until golden, stirring frequently (keep an eye on it while cooking, the sugars in the juice cause it to brown really quickly).
  6. Cool slightly; add apricots and craisins. Cool completely, and store in an airtight container.
