Ingredients:

Directions:

  1. Boneless chicken breasts, cut into bite size pieces
  2. Cans diced tomatoes, drained
  3. Large can yellow or white corn, drained
  4. Cup sour cream (more if desired)
  5. Cups cheddar cheese, reserve cup to sprinkle on top
  6. Tortillas
  7. Serve with sour cream and salsa.
  8. Preheat oven to 350 degrees.
  9. Cook chicken in skillet with a little olive oil. Drain.
  10. Put cooked chicken in a large bowl, add tomatoes, corn, sour cream and cheese. Mix well.
  11. Put mixture in tortillas and roll up tightly.
  12. Lay tortillas in a row in a greased 9x13 casserole dish.
  13. If you have some filling left over, just sprinkle on top of tortillas and cover with cheese.
  14. Bake at 350 degrees for approx. 30 minutes.
  15. Serve with salsa and sour cream.
  16. Baptist Sangria
  17. Lt. bottle of lemon-lime flavored carbonated beverage
  18. Oz. can frozen orange juice concentrate, thawed
  19. Oz. can frozen lemonade juice concentrate, thawed
  20. Mix together and serve in a punch bowl or pitchers.
  21. Excellent with lots of fruit cut up in it: oranges, grapes, pineapple, lemons.
  22. Serve really cold.
