Ingredients:

Directions:

  1. Preheat oven 350
  2. Grease 9 x 13 baking dish with butter , layer potatoes evenly and salt and pepper to taste.
  3. Bake for 20 mins or until golden. ( this can be done the night before cover and put in fridge until morning)
  4. Scramble eggs and pour evenly on top of potatoes.
  5. Sprinkle meat of choice evenly on top.
  6. Sprinkle cheese on top of egg and meat
  7. Bake for 30- 40 mins or until eggs are cooked
  8. *** Note- A great addition to this is to saute onions and bell pepper and sprinkle along with the meat .
