This is really easy to make and the potatoes can be cooked the night before. I make this for Christmas every year. I love it because of the potatoes . Ingredients:
1 bag of shredded breakfast potatoes |
12 eggs |
ham , cooked sausage or cooked bacon ( all 3 are okay too) |
1 cup sharp cheddar cheese |
melted butter to grease dish |
salt |
pepper |
Directions:
1. Preheat oven 350 2. Grease 9 x 13 baking dish with butter , layer potatoes evenly and salt and pepper to taste. 3. Bake for 20 mins or until golden. ( this can be done the night before cover and put in fridge until morning) 4. Scramble eggs and pour evenly on top of potatoes. 5. Sprinkle meat of choice evenly on top. 6. Sprinkle cheese on top of egg and meat 7. Bake for 30- 40 mins or until eggs are cooked 8. *** Note- A great addition to this is to saute onions and bell pepper and sprinkle along with the meat . |
