Ingredients:

  • 3 garlic cloves
  • 1 lemon , zest of
  • 2 rosemary sprigs
  • salt , to taste
  • pepper , to taste

Directions:

  1. Preheat oven to 425 degrees. Place chicken on a rack in a roasting pan or cast-iron skillet.
  2. In a blender or food processor, combine garlic, lemon zest, and rosemary. Spread puree under the skin of the chicken.
  3. Sprinkle generously with salt and pepper.
  4. Cook the chicken for 15 minutes for each pound, plus 15 minutes (i.e., a 3-lb bird: 15 minutes x 3 + 15 minutes = 60 minutes).
  5. Chicken is done when juices run clear when pricked with a fork.
