Don's Tuscan Vegetable Soup

Ingredients:

  • 15 oz navy beans
  • 1 tbsp olive oil
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 1 1/2 cups diced zucchini
  • 1 clove garlic
  • 1 tsp of thyme
  • 1/2 tsp of sage
  • 1/4 tsp black pepper
  • 14 1/2 oz diced tomatos
  • 2 cups spinach

Directions:

  1. In small bowl mash 1/2 the beans
  2. Heat olive oil on med. in large soup pan
  3. Add onion, carrots, celery, zuchinni, garlic, thyme,sage, 1/2 Tsp salt (op),/1/4 tsp black pepper, and cook stirring occasionally until veggies are tender-about 5 min.
  4. Add broth and tomatos with the juice and bring to a boil. Add the mashed and whole beans and the spinach leaves.
  5. Cook till the spinach leaves are wilted.
  6. Taste best if you let it simmer on low for a couple of hours and let the water simmer out (thicken)
  7. -Salt content can be reduced by using a low salt chiken broth-
