Ingredients:

Directions:

  1. Line 9 x 13 baking pan with foil. Brush on olive oil to coat.
  2. Cover bottom of pan with the first 5 ingredients for the vegetable mix. Sprinkle the last 4 ingredients over the vegetables and then drizzle olive oil.
  3. Combine all the meatball ingredients in a medium sized bowl till well incorporated. Roll into 2 balls and place on top of the frozen vegetable mixture.
  4. Cover pan with another sheet of foil sprayed with non-stick olive oil spray and seal tight.
  5. Bake in 375 degree oven for 60 minutes.
  6. Serve in bowls or over steamed rice.
