Cranberry Glazed Pork Loin

Ingredients:

  • 5 lbs pork loin
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup water
  • 3 tbsp brown sugar
  • 3 tbsp molasses
  • 4 whole cloves

Directions:

  1. Preheat oven to 350°F.
  2. Place pork fat side up in roasing pan.
  3. Rub it all over with salt & pepper.
  4. Roast uncovered at 350F for 2 1/2 hours.
  5. Meanwhile, in a medium saucepan combine water, brown sugar,molasses, vinegar, cloves and cinnamon.
  6. Bring to a boil .
  7. Add cranberries.
  8. Reduce heat and simmer for 10 minutes.
  9. Remove cranberry mixture from heat and press through a sieve or process in food processor until smooth.
  10. Pour the cranberry mixture over the pork roast, increase the oven heat to 425F and bake 15 minutes basting once.
