Cold Cucumber Soup

Ingredients:

Directions:

  1. Saute onion in hot oil 5 minutes over medium heat.
  2. Add garlic and cucumber and cook 3 minutes more.
  3. Add broth, lime juice, and sugar.
  4. Boil.
  5. Reduce heat and cover and cook for 20 minutes.
  6. Cool for a few minutes.
  7. Puree in a blender.
  8. Add yogurt, dill, salt and pepper to taste.
  9. Blend again.
  10. Chill and serve in icy cold bowls.
  11. Garnish with scallions.
