Ingredients:

  1. For the Black Beans, boil the water in your pot and add beans and salt. Cover tightly and turn off your burner (or set aside) and let beans soak for an hour. Meanwhile, chop the garlic and onion. After the beans soak for an hour, add the Garlic, Onion and Cumin and simmer them on low, with the lid on, for an additional hour, or until done. Now you should start the water for the rice and get it going.
  2. In a sauce pan, boil water and salt then add rice and cook until done. Chop Cilantro and Green Onion. Squeeze the juice from the lime over the rice, add the Cilantro and Green Onion and lightly fold inches Cover and set aside.
  3. Now get your skillet put it on medium heat. Add the Coconut Oil and let it melt. Salt and Pepper (to taste) both sides of the filets, then add the fillets to the hot skillet (about two minutes on each side depending on the size and thickness of the fillets).
  4. Place the rice on the plate, then the beans on the rice, and top with the filet. Garnish with a fresh cilantro sprig.
  5. Enjoy!
