Chilli Jam to Go With Chargrilled Squid

Ingredients:

Directions:

  1. Chop half the tomatoes.
  2. Place in a blender then add garlic, ginger, chillies and fish sauce and blend.
  3. Roughly chop the remaining half of tomatoes (not finely) and add.
  4. Add the red wine vinegar, balsamic and sugar.
  5. Place in a pot and bring to simmer.
  6. Turn down heat and simmer for 40 minutes.
  7. Stir occasionally.
  8. Serve with char grilled Squid on a bed of rocket as starter.
