Chilli Jam to Go With Chargrilled Squid |

I think I saw this on a cooking program on TV. I have made the chilli jam and it is absolutely beautiful. I never cook seafood as hubby is allergic, but this chilli jam, served with the chargrilled squid looked absolutely divine on TV! Ingredients:
450 g tomatoes, chopped (use 1/2 the tomatoes) |
2 garlic cloves |
1 inch gingerroot |
1 1/2 chili peppers |
1 tablespoon thai fish sauce |
50 ml red wine vinegar |
1 tablespoon balsamic vinegar |
225 g demerara sugar |
Directions:
1. Chop half the tomatoes. 2. Place in a blender then add garlic, ginger, chillies and fish sauce and blend. 3. Roughly chop the remaining half of tomatoes (not finely) and add. 4. Add the red wine vinegar, balsamic and sugar. 5. Place in a pot and bring to simmer. 6. Turn down heat and simmer for 40 minutes. 7. Stir occasionally. 8. Serve with char grilled Squid on a bed of rocket as starter. |
