Ingredients:

Directions:

  1. Early in the day cook carrots in boiling salted water, covered until barely tender. drain
  2. Meanwhile in saucepan gently cook onion in butter for 2-3 minutes.
  3. Stir in flour, salt, mustard, and milk.
  4. Cook, stirring until smooth.
  5. Add pepper and celery salt.
  6. In 2 Qt. casserole, arrange 1/3 of the carrots, 1/2 of the cheese and repeat with a second layer of carrots and the rest of the cheese.
  7. End with last 1/3 of carrots
  8. Pour sauce slowly over caserole
  9. Top with buttered bread crumbs. Refrigerate until ready to bake. 45 minutes before serving bake at 350 degrees for 40 minutes
