A wonderful cheesy casserole that my mother makes for the holidays, even people that don't care for carrots love this dish. Ingredients:
12 medium carrots sliced |
1 small onion diced |
1/4 cup butter |
1/4 cup flour |
1 t salt |
1/4 t dry mustard |
2 cups milk |
1/8 t pepper |
1/4 t celery salt |
1/2 lb. chedder cheese shredded |
3 cups buttered fresh bread crumbs |
Directions:
1. early in the day cook carrots in boiling salted water, covered until barely tender. drain 2. Meanwhile in saucepan gently cook onion in butter for 2-3 minutes. 3. Stir in flour, salt, mustard, and milk. 4. Cook, stirring until smooth. 5. Add pepper and celery salt. 6. In 2 Qt. casserole, arrange 1/3 of the carrots, 1/2 of the cheese and repeat with a second layer of carrots and the rest of the cheese. 7. End with last 1/3 of carrots 8. pour sauce slowly over caserole 9. top with buttered bread crumbs. Refrigerate until ready to bake. 45 minutes before serving bake at 350 degrees for 40 minutes |
