Celery Slaw With Shrimp

Ingredients:

Directions:

  1. Combine mayonnaise, sour cream, olive oil, vinegar, mustard and garlic in a blender and process until smooth then set aside.
  2. In a large bowl toss together the shrimp, olive oil, paprika, salt and pepper.
  3. Preheat a large nonstick fry pan over medium high heat.
  4. Add half of the shrimp and sauté until they turn pink and are opaque throughout about 3 minutes.
  5. Transfer to a large bowl and repeat with the remaining shrimp then set aside to cool.
  6. Rinse the fry pan then wipe dry and return to medium heat.
  7. Add bacon slices and fry turning as needed until crisp about 6 minutes.
  8. Using a slotted spatula transfer to paper towels to drain.
  9. Let cool then crumble and set aside.
  10. To assemble the slaw add the cabbage celery, green onions, radishes, parsley and vinaigrette to the shrimp and toss to coat all the ingredients evenly.
  11. Season with salt and pepper and toss again.
  12. Transfer slaw to a serving bowl or deep platter and sprinkle the crumbled bacon and blue cheese over top.
  13. Serve immediately.
