Caprese Pasta in Alfredo Sauce

Ingredients:

Directions:

  1. Preheat oven to 350 degree fahrenheit.
  2. Dice tomatoes into small pieces and transfer to a mixing bowl. Add chopped garlic, salt, pepper, 11/2 of chopped basil, extra virgin olive oil and balsamic vinaigrette. Set aside and allow to marinate for 10 minutes.
  3. Cook pasta as per box instructions.
  4. Increase oven temperature to 450 degrees fahrenheit.
  5. Combine Alfredo sauce and garlic powder in a saucepan and bring it to a simmer. (Season with salt and pepper as desired).
  6. Cut Italian sausage into 1/2 pieces (it will look like mini meatballs) and fry until brown.
  7. Combine cooked pasta, sauce, Caprese mix and fried Italian sausages into a baking pan. Top with mozzarella cheese to evenly cover surface.
  8. Sprinkle parmesan cheese and place in over for 5-7 minutes or until cheese is golden, crisp and bubbly.
  9. Garnish with remaining basil leaves.
