Brown Rice And Tuna Salad

Ingredients:

  • 1 1/5 cup brown rice or other long grain rice will do too.
  • 250 g cucumbers unpeeled cut in 1 cm cubes, (recipe ask for peeled but i don'tsp do that).
  • 1/2 cup small radishes halved .
  • pepper to taste, ( no salt as tuna is salt enough already).

Directions:

  1. Cook rice following packet instructions, drain well, set aside for 10 min to cool.
  2. Stirr balsamic through rice and set aside for 15 min.
  3. Add all other ingredients to rice add pepper to taste, toss to combine.
  4. Serve with or on slices brown bread.
