Ingredients:

  • 1 (12-oz package) pitted plums ( prunes) , about 2 cups
  • 1 1/2 cups orange juice
  • 1 tsp. cinnamon
  • 1/4 nutmeg
  • 2 (8-oz) containers nonfat vanilla yogurt

Directions:

  1. Combine the plums, orange juice, cinnamon, and nutmeg in a medium saucepan; bring to a boil over medium heat.
  2. Remove from heat, cover and set aside for 30 minutes or longer.
  3. Puree the plums with all of the liquid in a food processor or blender. You can do this in two batches if you wish.
  4. Gently fold in the vanilla yogurt until blended.
  5. Transfer to six 6-ounce custard cups.
  6. Cover and refrigerate at least two hours or overnight.
  7. Garnish pudding with fresh berries and serve chilled.
