Plums aka prunes make a delightful custard when cooked and combined with yogurt. I was pleasantly surprised (as was my husband.) Don't worry about the initial unappealing look of the custard. 1 (12-ounces package) pitted plums (prunes), about 2 cups |
1 1/2 cups orange juice |
1 tsp. cinnamon |
1/4 nutmeg |
2 (8-ounce) containers nonfat vanilla yogurt |
Directions:
1. Combine the plums, orange juice, cinnamon, and nutmeg in a medium saucepan; bring to a boil over medium heat. 2. remove from heat, cover and set aside for 30 minutes or longer. 3. Puree the plums with all of the liquid in a food processor or blender. You can do this in two batches if you wish. 4. Gently fold in the vanilla yogurt until blended. 5. Transfer to six 6-ounce custard cups. 6. Cover and refrigerate at least two hours or overnight. 7. Garnish pudding with fresh berries and serve chilled. |
