Ingredients:

  • 1 (11oz) can brains
  • 3 eggs
  • 3 tbsp milk
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 1/2 tbsp butter

Directions:

  1. Drain gravy from brains
  2. Separate eggs.
  3. Add milk, salt and pepper to egg yolks-beat thoroughly.
  4. Folk in beaten egg whites.
  5. Melt butter in skillet-pour in egg mixture.
  6. Cook at a moderate temperature until underside of omelet becomes lightly browned.
  7. Spread brains on one hale fo omelet.
  8. Place skillet in 325 degrees preheated oven for about 10 minutes until egg mixture is dry.
  9. Remove from oven.
  10. Fold plain half of omelet over side with brains.
